Makes 12 130 cal blueberry muffins Ingredients:
25 g butter, melted |
175 g apple sauce |
215 g flour |
1 pinch of salt |
75 g sugar |
2 tsp baking powder |
2 eggs |
50 ml milk |
150 ml water |
120 g blueberries |
Directions:
1. Sift all dry ingredients (flour, salt, baking powder, sugar) together and mix. 2. Beat eggs well then add melted butter, water, milk, apple sauce and beat well again. 3. Tip wet ingredients into dry and mix only to combine, mixture should be lumpy. 4. Add blueberries (if you cut them in half the purple colour should bleed through the muffin). 5. Bake at 180 celsius for 12-15 min until done. 6. Reminder to self: i used 125 g of cow and gate baby apple/pear pudding instead of apple sauce. 7. If you use applesauce use 125g not 175g. Muffins will be slightly lower cal (like 125 each). |
