Tasty blueberry muffins, for an occasional breakfast treat. They freeze well, making them perfect for large batches. Ingredients:
3 cups milk |
4 eggs |
1 cup oil |
3 cups sugar |
1 tbsp vanilla flavoring |
1 tsp salt |
2 tbsp baking soda |
6 cups flour |
3 cups frozen blueberries, thawed, drained |
Directions:
1. Preheat oven to 400 degrees F. 2. Line muffin cups or spray with Pam. 3. In a large bowl, beat eggs and add milk and oil. Add remaining ingredients in order, stirring gently with as few strokes as possible. 4. Spoon batter into cups. 5. Bake for 20 minutes. |
