This recipe uses a bit of regular flour and a bit of whole wheat. A great way to make a healthier blueberry muffin. Ingredients:
1 1/4 cups flour |
1/2 cup whole wheat flour |
2 tablespoons baking powder |
3/4 teaspoon salt |
1/3 cup sugar |
2 eggs |
1/4 cup melted butter |
3/4 cup milk |
1 cup fresh blueberries |
Directions:
1. Preheat oven to 400 degrees. Sift together first 5 ingredients then add sugar. Beat eggs in separate bowl; add butter and milk. 2. Combine liquid and dry liquids with a swift strokes. Fold blueberries into batter. 3. Fill well greased muffin pans 2/3 full and bake for 20-25 minutes. |
