Yummy low-fat blueberry muffins Ingredients:
1 1/2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 egg |
1/2 cup sugar |
3 tablespoons nonfat yogurt |
1 tablespoon vegetable oil |
2 tablespoons vanilla extract |
1/2 cup nonfat milk |
2 cups blueberries |
1 teaspoon lemon extract (optional) |
Directions:
1. Preheat oven to 350 and use flour version of cooking spray a 12 cup muffin pan. 2. Combine Dry Ingredients. 3. Combine all other ingredients, except blueberries. 4. Combine slowly, as with other muffin recipes. 5. fold in blueberries. 6. Fill muffin cups 1/2 way 7. Bake in preheated oven for 25 mins or until golden brown, and springy to touch. |
