A bed and breakfast recipe adjusted to suit our family's tastes. We like blueberries - especially in muffins. This is a great snack or take-along if you are late getting out the door. Blueberries can be fresh, frozen or canned for this recipe. I have made this recipe using all three types of berry and each works great. Ingredients:
6 tablespoons butter or 6 tablespoons margarine |
1 1/4 cups sugar |
2 large eggs |
2 cups flour |
1/2 teaspoon salt |
2 teaspoons baking powder |
1/2 cup buttermilk |
4 ounces cream cheese, softened |
1 cup blueberries |
Directions:
1. Combine all ingredients in mixing bowl. Mix until moistened. 2. Put in greased muffin tins. 3. Bake at 375 degrees for 30 minutes. |
