An old favorite. Ingredients:
1 3/4 cups flour |
1/3 cup sugar |
2 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup fresh blueberries or 1 cup unthawed frozen blueberries |
1 egg |
1/2 teaspoon lemon juice |
1/3 cup butter, melted |
1/3 cup butter or 1/3 cup margarine, melted |
Directions:
1. In a large bowl, combine the flour, sugar, baking powder and salt. 2. Stir in blueberries. 3. Add milk, egg, lemon juice and butter. 4. Mix just until dry ingredients are moistened. 5. The batter will be lumpy (do not over mix). 6. Spoon batter into twelve 2 1/2 inch greased muffin cups. 7. Preheat oven to 400 degrees. 8. Bake for 25 minutes or until tops spring back when lightly touched. 9. Serve warm. |
