Blueberry Molasses Muffins |

A great, moist and fruity bran muffin made with molasses for a rich colour and flavour. Ingredients:
1 cup all-purpose flour |
1 1/2 teaspoons baking soda |
1 1/4 cups skim milk |
1/2 cup molasses |
1/3 cup blueberry or vanilla yogurt |
2 cups bran flakes cereal |
1/2 cup fresh or frozen blueberries |
Directions:
1. Preheat oven to 375 degrees F. Lightly grease a 12 cup muffin pan. 2. In a medium bowl, sift together flour, baking soda, and salt. 3. In a separate medium bowl, mix milk, molasses, and yogurt. 4. Mix in the bran cereal. 5. Thoroughly stir in the flour mixture. 6. Fold in the berries. 7. Transfer to the prepared muffin pan. 8. Bake 20 minutes in the preheated oven, until a knife inserted in the center of a muffin comes out clean. |
