Blueberry Mango Oatmeal Muffins |

Mango makes regular blueberry muffins practically exotic, all year round. Ingredients:
1 1/4 cups quick-cook oats |
1 cup self-rising flour |
1/3 cup sugar |
1/2 tsp salt |
1 cup milk |
1 egg |
1/4 cup oil |
1 cup blueberries (fresh or frozen) |
1 cup dried mango, cut into pieces |
Directions:
1. Preheat oven to 220C. 2. Combine dry ingredients (oats, flour, sugar, salt.) 3. Combine milk, egg, and oil. 4. Stir dry ingredients into wet ingredients. Do not overmix. 5. Mix in fruit, making sure not to overmix. 6. Spoon into paper muffin cases (in muffin tin), and bake for 20-25 minutes. Over-baked muffins will be tough. |
