Fruity ,creamy and yummy tiramisu.Good Housekeeping Ingredients:
1 to 2 lemons |
3-3/4 c blueberries |
3/4 c sugar |
4 tbs water |
1 container (17.6oz)greek yogurt |
1 pkg. (3oz)ladyfingers,hard or soft work well |
mint sprigs for garnish |
Directions:
1. From lemons,grate 1-1/2 tsp peel and squeeze 1/4 c juice 2. In med. saucepan,combine 1-1/2 c blueberries,1/4 c sugar,and 1 Tbs water. Heat on med. 5 mins. or until blueberries soften and juices thicken,stirring occasionally. Transfer to med. bowl and stir in 1-1/2 c blueberries. Set aside. 3. Prepare lemon syrup: In microwave -safe small bowl,combine 1/4 c sugar,and remaining 3 Tbs water.. Cook in microwave on High 1 min. Stir in 3 Tbs lemon juice and 1 tsp lemon peel. 4. In med. bowl, stir together yogurt and remaining 1/4 c sugar,1 Tbs lemon juice and 1/2 tsp lemon peel. 5. In 8x8 ceramic or glass baking dish,arrange 1/2 of ladyfingers. Brush with half of lemon syrup. Spoon blueberry mixture evenly over ladyfingers.Arrange remaining ladyfingers over blueberries. Brush with remaining lemon syrup. Spoon yogurt mixture on top,spreading evenly. Cover and refrigerate overnight. To serve,top tiramisu with remaining 3/4 c blueberries and garnish with mint sprig. |
