Blueberry Lemon Shortbread Parfait |

A recipe , with photo from Pillsbury 2001. Very cool, light tasting and easy. A great flavor combination! Ingredients:
1 c shortbread cookie crumbs (about 5 oz) |
3 tbl butter, melted |
1 c purchased lemon curd |
1 c frozen whipped topping, thawed |
1 pint (2 cups) fresh blueberries |
1 tsp powdered sugar |
Directions:
1. In a small bowl, combine cookie crumbs and melted butter; mix well 2. In each of 4 parfait glasses or dessert dishes. layer about 2 Tbl of the cookie crumbs, 2 Tbl of the lemon curd , 2 Tbls of the whipped topping and 1/4 cup of blueberries 3. Repeat layers 4. Refrigerate until serving time 5. Just before serving, sprinklwe parfaits iwth powdered sugar 6. Store refrigerated and covered |
