Blueberry Lemon Pancakes

The lemon zest and juice in these pancakes give them a delicious edge at breakfast.
Ingredients:
1 egg
1 c. flour (white is best, but for health minded use stone ground whole wheat)
3/4 c. milk (skim or buttermilk)
1 t sugar
2 t oil
1 t baking powder
1/2 tsp salt
2 tsp lemon zest
1 tsp lemon juice
1/2 c. fresh blueberries
Directions:
1. Beat egg until frothy
2. Fold in remaining ingredients except blueberries, stirring just until smooth.
3. Gently fold in blueberries.
4. Note: You can use frozen berries of any kind or mix-just put them in the fridge covered with Saran wrap the night before. Makes about 3-4 pancakes for each person.
