The lemon zest and juice in these pancakes give them a delicious edge at breakfast. Ingredients:
1 egg |
1 c. flour (white is best, but for health minded use stone ground whole wheat) |
3/4 c. milk (skim or buttermilk) |
1 t sugar |
2 t oil |
1 t baking powder |
1/2 tsp salt |
2 tsp lemon zest |
1 tsp lemon juice |
1/2 c. fresh blueberries |
Directions:
1. Beat egg until frothy 2. Fold in remaining ingredients except blueberries, stirring just until smooth. 3. Gently fold in blueberries. 4. Note: You can use frozen berries of any kind or mix-just put them in the fridge covered with Saran wrap the night before. Makes about 3-4 pancakes for each person. |
