Mmmmmm, refreshing lemon and blueberries all in one loaf. Make it before blueberry season is gone! Ingredients:
2 cups flour |
1 cup sugar |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
1 lemon, zested and juiced |
1 lemon, juiced |
2 tablespoons melted butter |
boiling water |
1 large egg, beaten |
1 1/2 cups blueberries |
1/2 cup pecans, chopped |
Directions:
1. Sift dry ingredients. Place juice, zest & butter in 3/4 cup measuring cup and add boiling water to fill. Combine with egg and stir into dry ingredients. Fold in blueberries & nuts and pour into loaf pan. Let stand 20 minutes and bake at 350 for 1 hour. 2. Immediately remove from pan and cool on rack. |
