I got this recipe from my mom. She always makes it when blueberries are in season. YUM!! Ingredients:
1 1/2 cups all-purpose flour |
3/4 cup sugar |
2 teaspoons baking powder |
1 1/2 teaspoons grated lemons, rind of |
1/2 teaspoon ground nutmeg |
1/4 teaspoon salt |
2/3 cup milk |
1/4 cup butter or 1/4 cup margarine, melted |
1 egg, beaten |
1 teaspoon vanilla extract |
2 cups blueberries, fresh or frozen |
3/4 cup sugar |
1/2 cup all-purpose flour |
1/4 cup butter or 1/4 cup margarine, melted |
Directions:
1. Add first 6 ingredients to a large mixing bowl; stir to combine. 2. Add the milk, butter, egg, and vanilla; using an electric mixer, beat for 2 minutes or until well blended. 3. Pour batter into a greased 13x9 inch baking pan. 4. Sprinkle with blueberries. 5. For the topping: in a smaller bowl, add the sugar and flour; stir to mix. 6. Add the butter; toss with a fork until crumbly. 7. Sprinkle over blueberries. 8. Bake at 350 degrees for 40 minutes or until lightly browned. |
