So easy and delicious. A wonderful pie with beautiful blueberries. Top each slice with a scoop of creamy, vanilla ice cream, serve with a nice cup of coffee....it's a perfect dessert! Ingredients:
2-9 inch flaky pastry crusts, unbaked |
1 cup sugar |
4-6 tablespoons flour, depending on the juciness of the blueberries |
1/4 teaspoon salt |
5 cups *fresh* blueberries, washed and drained |
1 tablespoon fresh lemon juice |
3 tablespoons butter |
Directions:
1. Combine sugar, flour, and salt in bowl 2. Place 1 pastry crust in a 9 inch pie plate 3. Sprinkle 1/2 of sugar mixture over bottom of chilled, unbaked pastry 4. Add blueberries and sprinkle with the remaining sugar mixture 5. Drizzle lemon juice over top 6. Dot with the butter 7. Cover with the top crust, sealing edges well 8. Bake at 375 degrees for about 30-40 minutes or until crust is golden brown 9. Cool on wire rack 10. Slice and serve with vanilla ice cream 11. NOTE: IF A GLOSSY FINISH IS DESIRED, BRUSH TOP PASTRY WITH SLIGHTLY BEATEN EGG WHITES. THEN SPRINKLE WITH SUGAR BEFORE BAKING....MAKE SURE THE EGG WHITES DON'T PUDDLE ON THE PASTRY |
