These are so good....Serve with strips of bacon and blueberry syrup Ingredients:
1 1/2 cups flour |
1 teaspoon baking powder |
2 tablespoons confectioners sugar |
1/2 teaspoon salt |
1/3 cup milk |
2 eggs, separated |
1 cup fresh blueberries |
syrup |
2 cups fresh blueberries |
1 cup water |
3/4 cup confectioners sugar |
1/2 teaspoon lemon juice |
Directions:
1. Sift dry ingredients together; make a well in center of dry ingredients and pour milk in. 2. Add lightly beaten egg yolks; blend together till batter is smooth. 3. Fold in fresh blueberries. 4. Fold in stiffly beaten egg whites. 5. Chill for 30 minutes. 6. Form into fritters by making balls with 2 spoons dipped into hot water. 7. Deepfry until golden brown. 8. Syrup: 9. Wash and drain blueberries. 10. Place in saucepan with water; cook slowly for 15 minutes. 11. Strain through fine strainer. 12. Addy sugar and lemon juice to clear liquid. 13. Cook for 15 more minutes to sauce is syrupy. 14. Cool and serve.. |
