Ingredients:
1/2 cup fresh or frozen blueberries, thawed |
1/2 cup water |
1 tablespoon plus 1 teaspoon sugar |
1 tablespoon olive oil |
1/2 teaspoon lemon rind |
1/4 cup lemon juice |
1/4 teaspoon salt |
1/4 teaspoon freshly ground pepper |
Directions:
1. Combine all ingredients in a small bowl, stirring well. Cover and chill thoroughly. Serve over steamed asparagus, fresh fruit salads, or grilled or poached chicken. Store dressing in refrigerator up to 3 days. |
