Easy and delicious blueberry fritters. Recipe from an old cookbook. Ingredients:
vegetable oil |
1/2 c whipping cream |
1 egg |
1 tsp vanilla |
1 c self-rising flour |
1 c self-rising cornmeal |
1/3 c sugar |
1-1/2 c fresh blueberries |
powdered sugar |
Directions:
1. Heat 2 of oil in a large heavy skillet to 375 degrees on deep-fat thermometer. 2. Meanwhile,combine cream,egg and vanilla in small bowl. 3. Combine flour,cornmeal and sugar in large bowl. Stir in cream mixture just till moistened. Fold in blueberries. 4. Carefully drop batter by heaping tablespoonfuls into hot oil. 5. Fry till golden brown,turning once. Drain well on paper towels. Sprinkle with powdered sugar;serve immediately. |
