I got this from the Quick and Easy Diabetic Desserts cookbook. I haven't made these yet. Enjoy! Ingredients:
vegetable oil |
1/2 cup whipping cream |
1 egg |
1 teaspoon vanilla |
1 cup self rising flour |
1/3 cup self-rising cornmeal |
1/3 cup granulated sugar (i would think you could sub splenda) |
1 1/2 cups fresh blueberries |
powdered sugar |
Directions:
1. Heat 2 inches of oil in a large heavy skillet to 375*F. on a deep fat thermometer. 2. Meanwhile, combine cream, egg and vanilla in a small bowl. 3. Combine the flour, cornmeal and white sugar in a large bowl. Stir in cream mixture just until moistened. Fold in blueberries. 4. Carefully drop the batter by heaping tablespoonfuls into hot oil. Fry until golden brown, turning once. 5. Drain well on paper towels. Sprinkle with powdered sugar. 6. Serve immediately. Enjoy! |
