My granddaughter was helping to make scones and I gave her some pastry which she came up with a dimple in which she placed a blueberry. Hence the name. They could be a small cake or a small scone as the texture is a little like a British scone,so could be eaten with jam or eaten alone. Ingredients:
fresh blueberries |
225g self raising flour |
85g butter (softened) |
85g castor sugar |
1 egg (beaten) |
Directions:
1. Preheat oven 200c gas 6 2. Rub flour and butter together till like fine bread crumbs 3. add sugar and egg 4. Mix well form dough into balls about the size of a large walnut 5. Place onto a lined baking tray, press slightly to flatten a little, leaving a gap in between as they may spread a little 6. With the end of a wooden spoon make a dimple in the dough large enough to put one or two blueberries 7. Bake for about 10-15 minutes, taking care not to over cook, they should be very pale golden in colour. 8. Remove and cool |
