An excellent treat for blueberry fans. Enjoy! Ingredients:
3/4 cup granulated sugar |
1/4 cup shortening |
1 egg |
1/2 cup milk |
2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
2 cups fresh blueberries (or frozen) |
1/2 cup granulated sugar |
1/3 cup all-purpose flour |
1/2 teaspoon ground cinnamon |
1/4 cup butter or 1/4 cup margarine, softened |
Directions:
1. Preheat Oven to 375 degrees F. 2. Grease one 8x8 square cake pan. 3. Cream together 3/4 cup sugar, shortening and egg. 4. In a separate bowl, mix 2 cups flour, baking powder and salt. Stir it into the sugar mixture with the milk. Stir in the blueberries, then pour it all into the pan. 5. For the topping : Combine the sugar, flour, cinnamon and butter (or margarine). Sprinkle it over the cake batter. 6. Bake for 25-30 minutes. |
