I hate to bake but got a great deal on blueberries. I use a store bought pie crust for this. Ingredients:
1 9-inch unbaked pie crust |

3/4 cup granulated sugar |
1/3 cup flour |
1 tablespoon cornstarch |
1 tablespoon lemon juice |
1/2 teaspoon cinnamon |
5 cups fresh blueberries |
topping |
2/3 cup packed light brown sugar |
3/4 cup quick cooking oatmeal |
1/2 cup flour |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
6 tablespoons butter, melted |
Directions:
1. Preheat oven to 375 degrees. 2. Press pie crust into 9-inch pie plate. 3. In a large bowl, stir together the sugar, flour, cinnamon and cornstarch. Mix in bluueberries. Add lemon juice and fold gently to combine. Pour into pie crust. 4. In a medium bowl, stir together brown sugar, oatmeal, flour cinnamon and nutmeg. Mix in melted butter with fork (or hands) until crumbly. Spread evenly over the pie filling. 5. Bake for 60 minutes, or until top is browned. Cool on a wire rack. |
