This is an awesome dish that can be used at breakfast, brunch or dessert. So full of great flavors. I have made this with blackberries, raspberries and strawberries as well but blueberries takes the cake. Enjoy Ingredients:
3 cups cooked brown rice |
3 cups fresh blueberries |
3 tablespoons firmly packed brown sugar |
1/4 cup firmly packed brown sugar |
vegetable cooking spray |
1/3 cup rice bran |
1/4 cup whole wheat flour |
1/4 cup chopped walnuts |
1 teaspoon ground cinnamon |
3 tablespoons margarine |
Directions:
1. Combine rice, blueberries and 3 tablespoons sugar. 2. Coat 8 individual custard cups or 2-quart baking dish with cooking spray. 3. Place rice mixture in cups or baking dish and set aside. 4. Combine bran, flour, walnuts, remaining sugar and cinnamon in bowl. 5. Cut in margarine with pastry blender until mixture resembles coarse meal then sprinkle over rice mixture. 6. Bake at 375 for 20 minutes or until thoroughly heated. 7. Serve warm. |
