Incredible. This is one of my favorite pies. I am not allowed to make 1...that is no joke....3 is the minimum to please everyone..... Ingredients:
1-1/4 cups graham cracker crumbs |
1/2 cups brown sugar |
1/2 cups finely chopped pecans |
1/2 cups melted margarine or butter |
8 ounces cream cheese softened |
1/2 cup sugar |
2 eggs beaten |
4 cups blueberries |
1 cup sugar |
2 tablespoon cornstarch |
1 teaspoon lemon juice |
Directions:
1. Combine cracker crumbs, brown sugar, nuts and butter then press into pie pan. 2. Combine cream cheese, sugar and eggs. 3. Mix thoroughly and pour over shell. 4. Bake for 20 minutes at 350 then cool. 5. Combine berries, sugar, cornstarch and lemon juice and cook over medium heat stirring constantly until mixture thickens. 6. Cool completely. 7. Top pie with cooled berry mixture and serve with whipped cream. |
