Blueberry Cream Cheese Muffins |

These were a big hit at my husbands work and daughters class for snacks. I always put in a basket with a towel and the guys say it reminds them of being little. Ingredients:
1 c blueberries |
2 c flour |
3/4 c sugar |
1 1/2 tsp baking powder |
3 oz cream cheese |
pinch of salt |
2 tsp lemon juice |
2 tsp vanilla |
1/2 c milk |
1/4 c melted butter |
2 eggs |
Directions:
1. Preheat oven to 400 2. Toss Blueberries in 2 T flour set aside 3. Combine all dry ingredients 4. Blend cream cheese, lemon, vanilla, milk, and butter. 5. Add eggs and mix real good 6. Add dry ingredients and mix in 7. Fold in blueberries 8. Bake 18-20 minutes 9. I serve with butter, can sprinklw raw sugar on top while baking |
