This is a great dessert to make for a crowd. You can't go wrong with cream cheese and blueberries! Ingredients:
crust |
1 cup chopped pecans |
1/2 cup melted butter |
1 cup flour |
filling |
8 oz cream cheese. softened |
1 cup powdered sugar |
8 oz cool whip |
topping |
4 cups blueberries, fresh or frozen |
1 cup sugar divided |
3 tbsp cornstarch |
1/4 cup water |
Directions:
1. Crust 2. Combine crust ingredients, spread in 13x9 inch pan 3. Bake at 350F for 15 minutes, cool 4. Filling 5. Beat together cream cheese and powdered sugar until well blended. 6. Fold in Cool Whip 7. Spread over cooled crust 8. Topping 9. Combine 1/2 cup sugar and cornstarch in a saucepan 10. Add water and 2 cups blueberries. 11. Cook over medium heat, stirring constantly until thickened and translucent 12. Crush some of the berries as they cook 13. Roemove from heat and add remaining sugar and blueberries 14. Spread over cream cheese filling and chill |
