Blueberry Cornmeal Pancakes |

I don't know how many this will serve, not many depending on the size of your pancakes... I love cornmeal and blueberries together... I haven't tried this recipe but I can easily convert it to gluten free...so i'm posting it Ingredients:
1/2 cup flour |
1/2 cup yellow cornmeal |
2 tablespoons sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon ground cinnamon |
1 cup nonfat yogurt |
3 tablespoons skim milk |
1 tablespoon vegetable oil |
1 egg -- lightly beaten |
1 cup blueberries |
Directions:
1. Combine first 6 ingredients in a large bowl; stir well. Combine yogurt and next three ingredients; add to dry ingredients, stirring until smooth. Gently stir in blueberries. 2. Spoon about 1/3 cup batter onto a hot nonstick griddle or nonstick skillet. Turn pancakes when tops are covered with bubbles and edges look cooked. |
