Blueberry Coffee Cake With Coconut Topping |

Love this with a nice hot cup of coffee Ingredients:
2 1/3 cups flour |
1 1/2 sticks butter, room temp. |
1 cup flaked coconut, sweetened |
1/2 cup light brown sugar, packed |
1 tsp. cinnamon |
2 1/2 tsp. baking powder |
1/2 tsp. salt |
1 cup sugar |
2 eggs |
1 cup milk |
2 1/2 cups blueberries (or 12 oz. frozen unthawed) |
Directions:
1. Preheat oven to 375 2. Topping 3. Combine 1/3 cup flour, 1/2 stick butter, coconut, brown sugar, and cinnamon in bowl and mix until crumbly 4. Set aside 5. Cake 6. Butter and flour 13x9x2 baking pan 7. Sift 2 cups flour, baking powder, and salt into bowl 8. Beat 1 stick butter with hand mixer until fluffy 9. Gradually add sugar until well blended 10. Add eggs, one at a time 11. Mix dry ingredients into mixture, alternating with milkin 3 additions each 12. Fold in blueberries 13. Pour batter into baking pan 14. Sprinkle topping evenly over batter 15. Bake for 40 minutes |
