Delicious low fat blueberry coffee cake Ingredients:
1 c. yogurt, non fat plain |
2 eggs |
3 t. vegetable oil |
1 1/2 cups flour |
2 t. baking powder |
1/2 t. baking soda |
1/2 c. sugar |
1 t. vanilla |
1 1/2 c. blueberries |
topping |
1/3 c. walnuts |
1/4 c. flour |
1/4 c. brown sugar |
2 t. butter |
Directions:
1. Mix all ingredients for batter folding in blueberries in last, be gentle. 2. Combine topping ingredients. 3. Preheat oven to 375. 4. Butter or spray with cooking spray, 9 x 9 inch pan. 5. Pour batter in, sprinkle topping and spread evenly over cake. Bake at 375 for 35-40 minutes. |
