Inspired by The Farm Vegetarian Cookbook. Blueberries can be replaced by cranberries, raisins, walnuts or whatever else you like. Ingredients:
2 3/4 cups flour |
1 1/4 cups sugar |
1 tablespoon molasses |
1 teaspoon cinnamon |
3/4 teaspoon nutmeg |
1/2 teaspoon clove |
1/2 teaspoon allspice |
1 cup margarine |
1 1/4 cups soymilk |
1/4 teaspoon salt |
3 teaspoons baking powder |
3/4 cup blueberries |
Directions:
1. Sift together first seven ingredients, then cut in margarine. 2. Set aside 1 cup of mixture for topping. 3. Add last four ingredients. 4. Beat with a whisk, then pour into lightly oiled and floured 8 x 8 pan. 5. Sprinkle with topping. 6. Bake at 350 for 40-45 minutes, or until knife comes out clean. |
