A yummy and healthy coffee cake. Ingredients:
1 cup whole wheat flour |
1 2/3 cups flour |
2 cups oats |
1 cup firmly packed brown sugar |
2 tablespoons baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon ground cloves |
2 cups skim milk |
2 eggs |
6 tablespoons applesauce |
2 cups blueberries (fresh or frozen) |
Directions:
1. Preheat oven to 375 degrees. 2. Combine first 8 ingredients. 3. Mix milk, egg, and oil. 4. Add to dry ingredients and mix until moistened. 5. Add blueberries. 6. Pour into a 9x13 pan which has been sprayed with non-stick coating. 7. Bake 35-40 minutes or until golden brown. |
