A delicious cobbler for a summer dessert. Ingredients:
2 cups fresh blueberries |
1/3 cup sugar |
1 tablespoon lemon juice |
3/4 cup water |
1/4 cup butter |
1/2 cup sugar |
1 egg |
1 teaspoon vanilla |
1 cup all-purpose flour |
1/2 teaspoon baking powder |
1/2 cup milk |
1/4 teaspoon salt |
Directions:
1. In a large pot, combine blueberries, 1/3 cup sugar, lemon juice and water. 2. Bring to a boil, stirring constantly; reduce heat and simmer for 5 minutes. 3. In a large bowl, cream butter and sugar. 4. Beat in egg and vanilla. 5. In another bowl, mix together flour, baking powder and salt, then add to butter mixture and alternately with milk. 6. Pour hot blueberry mixture into a buttered 1 1/2 quart baking dish. 7. Spoon batter on top of berries. 8. Bake in 375F oven about 30 minutes. 9. Serve warm with ice cream. |
