Blueberry Cinnamon Muffins |

Ingredients:
2 cups unbleached flour |
1/4 cup unbleached cane sugar |
3 teaspoons baking powder |
1/2 teaspoon cinnamon |
1/2 teaspoon salt |
1/4 teaspoon nutmeg |
1 egg |
1 cup milk |
6 tablespoons butter, melted then cooled |
1 cup blueberries |
unbleached flour (to coat blueberries) |
Directions:
1. Preheat oven to 400 degrees. In a bowl, combine dry. 2. ingredients. Add remaining ingredients, except. 3. blueberries and coating flour. Stir until mixed- do. 4. not over stir. Fold in blueberries which have been. 5. coated with flour. Pour in buttered cups in a muffin. 6. pan. Sprinkle each muffin with brown sugar topping. 7. Bake for 20-25 minutes or until done. Cool on a wire. 8. rack for a few minutes then remove muffins from pan. 9. Makes 12 muffins. 10. Brown Sugar Topping. 11. 1/2 cup dark brown sugar. 12. 1/2 cup flour. 13. 1/4 cup butter softened. 14. 1 teaspoons lemon zest. 15. 1/2 teaspoons cinnamon. 16. Combine ingredients in a bowl until mixed. |
