BLUEBERRY CHICKEN PASTA SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.
Ingredients:
3 cups spiral pasta
1 cup pea pods cut in half and trimmed
2 cups cooked chicken pieces
1 cup sliced celery
1 brimming cup fresh blueberries
1/2 cup finely chopped red pepper
1/4 cup finely chopped red onion
1/4 cup red wine vinegar
2/3 tablespoon chopped fresh basil
1 cup red wine vinegar dressing
1/2 cup freshly grated parmesan cheese
Directions:
1. Cook pasta according to package directions. 2. Just before pasta is ready add all remaining ingredients except parmsan cheese and dressing. 3. Take off heat when pasta is cooked and drain then add parmesan and dressing and mix well. 4. Serve immediately or place in refrigerator and eat cold.
