Blueberry Chicken Breasts

Ingredients:
2 chicken breasts
1/3 cup apricot jam
1 1/2 dijon mustard
1/3 cup frozen blueberries
1 tbsp salad oil
2 1/2 white wine vinegar
Directions:
1. Blend jam and mustard in small bowl.
2. Brown breasts in oil, reduce heat and top with jam/mustard blend and blueberries. Cover and cook on low for 15 minutes.
3. Remove breasts from pan, keep warm.
4. Add vinegar to pan, cook on high to reduce sauce.
5. Drizzle sauce over breasts and serve.
