I have started learning how to use a microwave correctly since my stove gave up the ghost so I will be posting some of the recipes I try out here. Hope you enjoy them.
Ingredients:
6 tablespoons butter or margarine
1 1/4 cups finely crushed graham crackers
3 tablespoons sugar
8 ounces frozen unsweetened blueberries
2 tablespoons sugar
1 tablespoon cornstarch
1 tablespoon kight corn syrup
2 tablespoons water
2 teaspoons lemon juice
2 8 ounce packages cream cheese
1/3 cup milk
1/4 cup sugar
2 eggs
Directions:
1. In an 8 by 1.5 or 9 by 1.5 inch round baking dish microwave butter, uncovered, on 100% (HIGH) 50 to 90 seconds or until melted.
2. Stir in crushed graham crackers and 3 tablespoons sugar until well moistened.
3. Press firmly against bottom and sides of dish.
4. Microwave on high 1 to 3 minutes,rotating once or twice, until set.
5. Set aside.
6. In a large bowl microwave blueberries, uncovered, on high 2 to 3 minutes or thawed and juicy.
7. Stir together 2 tablespoons sugar and cornstarch; stir in corn syrup, water, and lemon juice.
8. Mix in the blueberries.
9. Microwave, uncovered, on high 2 to 4 minutes or until thick, stirring twice.
10. Set aside to cool.
11. In a small mixer bowl microwave cream cheese, uncovered, on high 30 to 1 minute or until softened.
12. Add milk, 1/4 cup sugar, and eggs; beat at high speed of an electric mixer until smooth.
13. Pour cheese mixture evenly over crust.
14. Microwave, uncovered, at 50% (medium) 12 to 16 minutes or till the center is almost set, rotating pan a quarter of a turn every 4 minutes.
15. Remove from oven.
16. Cool.
17. Spoon cooled blueberry mixture over cheese.
18. Refrigerate until set.
19. Makes 8 to 12 servings.
