Blueberry Buttermilk Pancakes |

this is a recipe that I ripped out of a magazine... I love the fact that there is lot of blueberries in these...they are great topped with warm blueberry syrup....Yum Ingredients:
2 cups buttermilk |
2 eggs |
6 tbsp. (3/4 stick) unsalted butter, melted |
1 1/2 cups unbleached flour |
1 tbsp. sugar |
1/2 teasp. salt |
2 teasp. baking soda |
1 1/2 cups blueberies |
Directions:
1. in a large bowl , beat buttermilk and the eggs with a fork. 2. stir in the melted butter 3. sift together flour, sugar, salt, baking soda 4. gently stir the flour mixture into the buttermilk mixture. 5. just until ingredients are combine...the batter will be lumpy 6. heat a griddle to medium hot 7. grease lightly. 8. spoon about 3 tablespoons of batter per pancake 9. sprinkle blueberries on each pancake and press them into the batter with the back of the spoon 10. cook until you see a few bubbles on the top of the pancake have broken, then flip the pancake over 11. cook until golden brown 12. serve with butter and maple syrup or blueberry syrup |
