Everybody in my family loves this blueberry buckle, reveals Jacqueline Traffas of Sharon, Kansas. And it's so easy! Ingredients:
2 tablespoons butter, softened |
1/3 cup sugar |
1 egg |
1 cup king arthur unbleached all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1/4 cup 2% milk |
1 cup fresh or frozen blueberries |
topping: |
1/4 cup king arthur unbleached all-purpose flour |
2 tablespoons sugar |
3/4 teaspoon ground cinnamon |
2 tablespoons cold butter |
Directions:
1. In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Fold in blueberries. Spread into an 8-in. x 4-in. loaf pan coated with cooking spray. 2. For topping, combine the flour, sugar and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. 3. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 6 servings. |
