This blueberry loaf is made with whole wheat flour and yogurt for a healthier version. Ingredients:
1/2 cup butter |
1/2 cup honey |
2 eggs |
1 lemon, zest of |
1/2 teaspoon allspice |
1 teaspoon cinnamon |
1/2 cup yogurt, plain |
2 cups whole wheat flour |
3 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 walnuts, chopped (i use pecans) |
1 cup blueberries (tossed with 2 tablespoons flour) |
Directions:
1. Preheat oven to 375*. Cream the butter and honey until smooth. Add eggs, beating well. 2. Add the lemon zest, allspice and cinammon - mixing well. 3. Add yogurt and mix. 4. Sift the flour, baking powder and baking soda together. Slowly beat into the egg mixture. 5. Fold in the blueberries and nuts. 6. Bake in a greased loaf pan 375* for 50-60 minutes. |
