Very healthy, all natural (no processed ingredients) Ingredients:
1 tsp baking powder |
1 tsp baking soda |
1 1/4 cups bran, crude |
1/2 cup unsweetened applesauce |
1 cup fat free, plain yogurt |
1/4 cup dark brown sugar (packed) |
1 tbsp unsulphured molasses |
1 cup whole wheat flour |
2 egg whites |
2 cup fresh or frozen blueberries |
1/2 cup chopped walnuts |
1/4 - 1/2 tsp stevia powdered extract |
Directions:
1. Preheat oven to 400 degrees. Prepare 12 muffin cups. 2. Place all dry ingredients in a bowl and blend. Make a well in the centre; add remaining ingredients. Mix JUST until blended. Do not overmix. 3. Divide among muffin cups. Bake for about 18-20 minutes. |
