Moist muffins - fruit yogurt used instead of buttermilk found in many recipes - Soy flour helps keep muffin light - Frozen blueberries can be substituted for freah Ingredients:
2 cup all bran cereal |
3/4 cup sugar |
1 cup whole wheat flour |
1/4 cup soy flour |
1 1/4 tsp baking soda |
1/2 tsp salt |
1/4 cup canola oil |
1 large egg |
1 cup yogurt |
1 cup blueberries |
Directions:
1. Preheat oven to 375 degrees F and grease 12 cup muffin tin 2. Combine bry ingredients 3. In a separate bowl, whisk egg, yogurt, oil and stir in dry ingredients until just moist 4. Add blueberries and spoon int prepared muffin tin 5. Bake for 20 to 25 minutes until a tester (toothpick) inserted in the centre os a muffin comes out clean |
