This is from a Canadian Legion cookbook. Bridgewater United Church Nova Scotia. I use a wee bit less sugar & salt than the recipe calls for. I enjoy this recipe as they are light and tasty. You can use fresh or frozen blueberries. Ingredients:
2 eggs |
1 cup milk |
1/2 cup vegetable oil |
1 cup all-bran cereal |
2 cups flour |
1 cup white sugar |
4 teaspoons baking powder |
1 teaspoon salt |
1 1/2 cups frozen blueberries |
Directions:
1. Beat eggs. 2. Stir in milk and oil. 3. Add all-bran. 4. Let stand 5 minute. 5. Combine flour, sugar, baking powder, and salt. 6. Add to bran mixture, stirring until just blended. 7. Fold in blueberries. 8. Spoon into greased or lined muffin tins 3/4 full. 9. Bake at 400°F for 20-25 minute. |
