Yep, another bean recipe :) Makes about 12 regular muffins. Edited 7/22/10 Ingredients:
400 g cooked great northern beans |
1/2 c whole wheat flour |
1 t vanilla |
1 egg |
1/2 c splenda no calorie |
1/3 t salt |
3/4 c milk |
1 t smart balance |
3 t baking powder |
135 g (1 cup) frozen blueberries |
Directions:
1. Preheat oven to 400 and spray muffin pan with spray oil, or line with papers. 2. In a food processor or blender, mix together all ingredients except baking powder and blueberries. 3. Once mixture is smooth, add baking powder. 4. Remove blades and stir in blueberries. 5. Fill muffins to about 3/4 full. 6. Bake for 25-30 minutes. 7. Remove from pan to cooling rack after 5-10 minutes. |
