Favorite recipe from my childhood. Wonderful with fresh Michigan blueberries. The cooking directions might seem a little unusual, but the end result is a very crispy topped cake. Trust me, it's worth it!!! Ingredients:
2 cups blueberries |
1/2 cup sugar |
3 tablespoons butter |
1/2 cup milk |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 cup flour |
3/4 cup sugar |
1 tablespoon cornstarch |
1/4 teaspoon salt |
3/4 cup boiling water |
lemon juice |
Directions:
1. Line a well greased 8x8x2 pan with berries. 2. Sprinkle with lemon juice. 3. Cream together 1/2 cup sugar and butter. 4. Add milk, flour, baking powder and salt. 5. Pour over berries. 6. Combine sugar, cornstarch and salt. 7. Sprinkle evenly over top of cake. 8. Pour boiling water over all. 9. Bake 45 minute to 1 hour at 375degrees until light brown. 10. ****You can use any fruit. Peaches and strawberries are also WONDERFUL. |
