A wonderful way to use those fresh blueberries. =) Ingredients:
1 cup flour |
1 1/4 teaspoons baking powder |
1/2 cup shortening |
3/4 cup white sugar |
3 eggs |
1 3/4 teaspoons almond extract |
1/3 cup milk |
1 1/2 cups fresh blueberries |
1/3 cup confectioners' sugar |
6 tablespoons cream cheese, softened |
Directions:
1. Preheat oven to 350F. 2. Grease a 9 inch square baking pan. 3. Crust: Cream shortening, white sugar, one egg, milk, and 3/4 tsp. 4. ,almond extract. 5. Mix in flour and baking powder. 6. Spread crust evenly in baking pan. 7. Top w/ blueberries. 8. Topping: In a medium sized bowl beat 2 eggs and cream cheese until smooth. 9. Stir in powdered/confectioners sugar and 1 tsp almond extract. 10. Spread over blueberries. 11. Bake 55-60 minutes or until firm to the touch. 12. Cool in the pan before cutting. |
