A blueberry filled dessert bar with the consistency of Fig Newtons.
Ingredients:
1/2 cup butter
1 cup sugar
2 large eggs
1 teaspoon milk
1/2 teaspoon vanilla extract
1/2 teaspoon allspice
1 teaspoon lemon peel
3 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 pint blueberry preserves
Directions:
1. Cream butter & sugar well.
2. Add eggs, one at a time, beating after each addition.
3. Add milk, vanilla, allspice & lemon & blend.
4. In the first cup of flour, add baking powder & salt. beat inches.
5. Continue adding flour until the dough reaches the proper consistancy for rolling.
6. Divide dough into 2 equal parts, wrapp in plastic & chill in the refrigorator for 10-15 minutes.
7. Roll each piece between 2 pieces of waxed paper into roughly an 8 inch square.
8. Remove top layer of waxed paper & make an indentation with the back of a knife across the center.
9. Spoon jam on one half, fold dough over from the center line, pinch edges to seal & cut into bars.
10. Bake at 350 degrees for 20-25 minutes or until light tan.
11. Remove & cool on rack.
