A twist on banana bread. Great made with fresh off the vine blueberries. Ingredients:
2 cups all-purpose flour |
1 tsp. salt |
1 tsp. baking soda |
1 cup sugar |
1 egg, beaten |
one half cup vegetable oil |
1 tsp. vanilla extract |
two thirds cup mashed bananas |
1 cup fresh blueberries |
one half cup chopped nuts |
Directions:
1. In a large bowl, combine flour, salt, baking soda and sugar. 2. In a separate bowl, combine egg, oil, and vanilla extract and mix. Add to dry ingredients. 3. Fold in bananas and blueberries and mix well. 4. Add nuts and mix. 5. Pour into a greased loaf pan and cook at 350 degrees about 1 hour. Allow bread to cool before slicing. 6. The Skinny: Use your favorite sugar and egg substitutes. 7. You can also substitute an equal measure of apple sauce for the vegetable oil. |
