From Country Home. Haven't tried it yet, but fits in with other baked oatmeals. Ingredients:
2 cups frozen blueberries |
2 tablespoons lemon juice, divided |
1 (18 ounce) oats |
3 large eggs, beaten |
1 cup packed brown sugar |
1 cup unsweetened applesauce |
1 tablespoon cinnamon |
4 teaspoons baking powder |
1 teaspoon salt |
1 1/4 cups water |
1 cup milk |
1/4 cup melted butter |
Directions:
1. Toss blueberries with 1 T. lemon juice. Spread on greased 13 X 9 baking dish. Combine next 9 ingredients and the other 1 T. lemon juice, stirring until well blended. Pour over blueberries. Pour melted butter over oat mixture. Bake covered 350 F for 30. Uncover and cook 20 more minutes until golden brown and set. 2. Optional: Use chopped apples with pecans instead of blueberries. |
