BLUEBERRY APPLESAUCE COFFEECAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cooke Estate in Houston Texas in 1989. Ingredients:
2 cups self raising flour |
2 teaspoons baking powder |
2 teaspoons ginger |
2 teaspoons cinnamon |
1/2 teaspoon allspice |
1/2 teaspoon salt |
1/2 teaspoon finely chopped fresh rosemary |
1/4 cup olive oil |
1 cup sugar |
1 teaspoon vanilla |
1-1/3 cups unsweetened applesauce |
3/4 cup blueberries |
3 large egg whites |
1/4 cup brown sugar |
1/4 cup grape nuts cereal |
1 tablespoon cinnamon |
Directions:
1. Preheat oven to 350. 2. Sift together flour, baking powder, ginger, cinnamon, allspice and salt. 3. Beat together olive oil, sugar, vanilla and unsweetened applesauce then add to flour mixture. 4. Fold in blueberries then beat egg whites until peaked and fold into mix. 5. Pour into greased square pan then bake 60 minutes. 6. Mix together brown sugar, cereal and cinnamon then spread topping over cake. |
