Blueberry and Banana Pancakes |

Tasty pancakes. Kids love em. Ingredients:
1 1/2 cups all-purpose flour, sifted |
1/4 cup sugar |
4 teaspoons baking powder |
1 teaspoon salt |
2 eggs, beaten |
1 1/2 cups milk |
1/4 cup butter, melted |
1 large overripe banana, mashed |
1/8-1/4 teaspoon cinnamon |
1 teaspoon vanilla extract |
2 cups fresh blueberries, picked over |
Directions:
1. Mix flour, sugar, baking powder and salt in a large bowl. 2. Add eggs, milk, melted butter, mashed bananas, cinnamon and vanilla. Stir until well blended and smooth. 3. Gently fold in the blueberries. 4. Spoon 1/8-1/4 cup of batter for each pancake on preheated, greased griddle or skillet. 5. Once bubbling throughout on surface, turn over and cook until done. |
