Blue Manna Crab Waldof Salad

Ingredients:
600g crab meat or cooked blue manna crabs
1 egg room temp
2 tblsp lemon juice
clove garlic crushed
100ml olive oil
25gr grated parmesan
300ml celery heart shaved
1 granny smith apple shaved into rounds
70gm watercress
80gm roasted walnuts
extra virgin oil to serve
Directions:
1. lift tail flaps of crab and peal of back shell discard gills and brain and rinse. Crack body shell remove meat remove meat from claws Place in a bowl cover and refridge
2. C ook egg about 4 mins cool under cold water. peal 1/2 and remove yock keep white. mix yolk lemon juice and garlic in food processor keep motor running add olive oil in thin stream until thick. Add egg white and Parmesan, process for a few seconds season to taste add crab meat stir to combine
3. To serve, combine celery,apple and water cress in a bowl, layer salad with crab mix onto plates scatter with walnuts drizzle with oil and season
4. Enjoy with maybee a piot gris or a Spanish gadello
